Ingredients
- 8 bone-in, skin-on chicken thighs
- 2 limes, zested and juiced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
Instructions
- In a small bowl, combine the lime zest, lime juice, minced garlic, olive oil, salt, black pepper, paprika, and cayenne pepper to make the marinade.
- Place the chicken thighs in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the chicken thighs from the marinade and discard the excess marinade.
- Grill the chicken thighs for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Avoid moving the chicken too much to get nice grill marks.
