Ingredients
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 tablespoons lemongrass, minced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup snow peas
- 1/2 cup cashew nuts
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
Instructions
- In a small bowl, mix together 2 tablespoons soy sauce, 1 tablespoon fish sauce, 1 tablespoon oyster sauce, 1 tablespoon brown sugar, and 1 teaspoon cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the sliced chicken and stir-fry for 3-4 minutes until cooked through. Remove the chicken from the wok and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the wok. Stir in the minced lemongrass and garlic, and cook for 1 minute until fragrant.
- Add the sliced red bell pepper and snow peas to the wok, and stir-fry for 2-3 minutes until slightly tender.
- Return the cooked chicken to the wok, and pour in the prepared sauce. Stir-fry for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
- Add the cashew nuts to the wok and toss everything together for 1 minute to warm the nuts.
