Instructions

  • Preheat the oven to 425°F (220°C).
  • In a small bowl, mix together the lemon juice, lemon zest, minced garlic, fresh thyme leaves, olive oil, salt, and black pepper.
  • Place the whole chicken in a roasting pan and pat it dry with paper towels.
  • Carefully loosen the skin of the chicken and rub half of the lemon-thyme mixture under the skin, spreading it evenly over the breast and thigh meat.
  • Rub the remaining lemon-thyme mixture over the outside of the chicken, coating it evenly.
  • Cut the used lemons into quarters and place them in the cavity of the chicken.
  • Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
  • Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced between the leg and thigh.
  • Remove the chicken from the oven and let it rest for 10 minutes before carving.
  • Serve the lemon thyme roast chicken with the roasted lemon quarters and enjoy!
