Ingredients
- 4 salmon fillets (6 oz each)
- 1 lb asparagus, trimmed
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp lemon pepper seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Place the asparagus on a baking sheet and drizzle with 1 tbsp of olive oil. Season with salt and black pepper, then toss to coat. Roast in the preheated oven for 10-12 minutes, or until tender and slightly charred.
- While the asparagus is roasting, prepare the salmon. In a small bowl, mix together 1 tbsp of olive oil, lemon juice, and lemon pepper seasoning.
- Place the salmon fillets on a separate baking sheet lined with parchment paper. Brush the lemon pepper mixture over the salmon fillets, ensuring they are evenly coated.
- Once the asparagus is done, remove from the oven and set aside. Place the salmon in the oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
