Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.
  • While the quinoa is cooking, preheat the grill or grill pan over medium-high heat.
  • In a small bowl, whisk together the olive oil, lemon juice, garlic, parsley, basil, salt, and pepper to make the dressing.
  • Brush the chicken breasts with a little of the dressing and grill for 6-7 minutes on each side, or until cooked through.
  • Once the chicken is done, let it rest for a few minutes before slicing.
  • To serve, divide the cooked quinoa among 4 plates, top with sliced chicken, and drizzle with the remaining lemon herb dressing.
