Instructions

  • In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of fresh lemon juice, 2 cloves of minced garlic, 1 tablespoon of fresh chopped parsley, 1 teaspoon of fresh chopped thyme, 1 teaspoon of fresh chopped rosemary, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Place the mahi mahi fillets in a shallow dish and pour the lemon herb marinade over the fillets, turning to coat. Cover and refrigerate for at least 30 minutes to marinate.
  • Preheat the grill to medium-high heat. Remove the mahi mahi fillets from the marinade and discard the excess marinade.
  • Grill the mahi mahi fillets for 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
