- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of lemon zest
- 2 tablespoons of fresh lemon juice
- 1 tablespoon of fresh chopped parsley
- 1 tablespoon of fresh chopped cilantro
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons of fresh lime juice
- 2 tablespoons of fresh chopped cilantro
- Salt and pepper to taste
Instructions
- In a large bowl, combine the olive oil, garlic, lemon zest, lemon juice, parsley, cilantro, salt, and black pepper. Add the shrimp and toss to coat. Cover and refrigerate for 15-20 minutes to marinate.
- Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers.
- Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
