Ingredients
- 1 lb chicken tenders
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, mix together 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
- In another shallow dish, combine 1 cup of Panko breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 tablespoon of chopped parsley, 1 tablespoon of chopped thyme, 1 tablespoon of chopped rosemary, and 1 teaspoon of lemon zest.
- Dip each chicken tender into the flour mixture, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere. Place the coated tenders on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the crust is golden and crispy.
- While the chicken is baking, prepare the honey mustard glaze. In a small bowl, whisk together 1/4 cup of honey, 2 tablespoons of Dijon mustard, 1 tablespoon of mayonnaise, and 1 tablespoon of lemon juice.
- Once the chicken tenders are done, brush the honey mustard glaze over the top of each tender. Return to the oven for an additional 2-3 minutes to allow the glaze to caramelize slightly.
