Ingredients
- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 3 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- 1/4 cup of olive oil
- Salt and pepper to taste
- 1 pound of baby red potatoes, halved
- 1 pound of carrots, peeled and cut into sticks
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons of balsamic vinegar
- 2 tablespoons of honey
- 2 tablespoons of fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the lemon juice, lemon zest, garlic, rosemary, thyme, and olive oil. Season with salt and pepper.
- Place the chicken breasts in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes.
- In a large bowl, toss the potatoes, carrots, bell pepper, and red onion with balsamic vinegar, honey, and a drizzle of olive oil. Season with salt and pepper.
- Spread the vegetables in a single layer on a baking sheet. Place the marinated chicken breasts on top of the vegetables.
- Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables halfway through cooking.
