Ingredients
- 8 oz of pasta
- 2 boneless, skinless chicken breasts
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 lemon, juiced and zested
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side, or until cooked through. Remove from the skillet and let it rest for a few minutes before slicing into strips.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the asparagus and garlic, and sauté for 3-4 minutes, or until the asparagus is tender-crisp.
- Add the cooked pasta, lemon juice, and lemon zest to the skillet with the asparagus. Toss to combine.
- Add the sliced chicken back to the skillet. Sprinkle with fresh parsley and toss to combine. Season with additional salt and pepper if needed.
- Serve the lemon herb chicken and asparagus pasta with a sprinkle of grated Parmesan cheese on top. Enjoy!
