  • 8 oz of pasta
  • 2 boneless, skinless chicken breasts
  • 1 bunch of asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side, or until cooked through. Remove from the skillet and let it rest for a few minutes before slicing into strips.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the asparagus and garlic, and sauté for 3-4 minutes, or until the asparagus is tender-crisp.
  • Add the cooked pasta, lemon juice, and lemon zest to the skillet with the asparagus. Toss to combine.
  • Add the sliced chicken back to the skillet. Sprinkle with fresh parsley and toss to combine. Season with additional salt and pepper if needed.
  • Serve the lemon herb chicken and asparagus pasta with a sprinkle of grated Parmesan cheese on top. Enjoy!
