  • In a small bowl, whisk together 1/4 cup olive oil, 3 cloves minced garlic, 2 tbsp fresh lemon juice, 1 tbsp lemon zest, 1 tbsp chopped fresh thyme, 1 tbsp chopped fresh rosemary, 1/2 tsp salt, and 1/4 tsp black pepper.
  • Place the boneless, skinless chicken thighs in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 1 hour, or overnight for best results.
  • Preheat the oven to 400°F (200°C).
