  • 1 pound of large shrimp, peeled and deveined
  • 1/4 cup of olive oil
  • 4 cloves of garlic, minced
  • 1/4 teaspoon of red pepper flakes
  • 1/2 cup of chicken broth
  • 1/4 cup of fresh lemon juice
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh basil
  • 1 cup of cherry tomatoes, halved
  • 8 ounces of linguine pasta
  • 2 tablespoons of butter
  • 1/4 cup of grated Parmesan cheese

  • Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes.
  • Stir in the chopped basil and cherry tomatoes, and cook for an additional 1-2 minutes until the tomatoes start to soften.
  • Add the cooked linguine and butter to the skillet, tossing to coat the pasta in the sauce. Season with salt and pepper to taste.
  • Return the cooked shrimp to the skillet and toss to combine with the pasta and sauce.
  • Sprinkle with grated Parmesan cheese before serving.
  • Serve hot and enjoy!
