  • In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, and oregano. Season with salt and pepper.
  • Place the salmon fillets on a baking sheet lined with parchment paper. Brush the lemon garlic marinade over the salmon fillets.
  • Roast the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
