  • 4 cloves garlic, minced

  • 1/4 cup fresh lemon juice
  • 2 cups couscous
  • 2 1/2 cups water
  • 2 tablespoons chopped fresh parsley

Instructions

  • In a small bowl, mix together 1/4 cup olive oil, minced garlic, dried oregano, salt, and black pepper.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the marinated chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, pour in the chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Return the chicken to the skillet and simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  • While the chicken is simmering, prepare the couscous. In a medium saucepan, bring 2 1/2 cups of water to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff with a fork.
  • To serve, spoon the couscous onto plates and top with the lemon garlic chicken. Drizzle any remaining sauce from the skillet over the chicken and garnish with chopped fresh parsley. Enjoy!
