  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1/4 cup of chicken broth
  • 1/4 cup of freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season the chicken pieces with salt and pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  • Pour in the chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes to reduce slightly.
  • Add the cooked pasta and cooked chicken to the skillet. Toss everything together to coat the pasta and chicken with the lemon garlic sauce.
  • Sprinkle the grated Parmesan cheese over the pasta and toss to combine. Season with additional salt and pepper if needed.
  • Garnish with fresh parsley and serve hot. Enjoy!
