Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1/4 teaspoon red pepper flakes
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large skillet, melt 2 tablespoons of butter over medium-high heat.
- Add the shrimp to the skillet and season with salt and black pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and red pepper flakes, and sauté for 1 minute until fragrant.
- Add the asparagus to the skillet and cook for 3-4 minutes until tender-crisp.
- Return the cooked shrimp to the skillet. Add the lemon juice and zest, and toss everything together to coat evenly. Cook for an additional 1-2 minutes to heat through.
