Instructions

  • Pat the scallops dry with paper towels and season with salt and pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the scallops to the skillet and cook for 2-3 minutes on each side until golden brown. Remove the scallops from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Cook for 1 minute until fragrant.
  • Pour in the chicken broth, white wine, and lemon juice. Bring to a simmer and cook for 2-3 minutes to reduce the liquid by half.
  • Reduce the heat to low and whisk in the butter until melted and the sauce is smooth.
  • Return the scallops to the skillet and coat them with the lemon garlic butter sauce. Cook for an additional 1-2 minutes to heat the scallops through.
  • Sprinkle with chopped parsley and serve hot. Enjoy!
