  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

  • 2 tbsp chopped chives

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together 1/4 cup of fresh lemon juice, 2 tbsp of olive oil, 2 tbsp of chopped fresh dill, and 2 cloves of minced garlic. Season the salmon fillets with salt and pepper, then brush the lemon dill mixture over the fillets.
  • Place the salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • While the salmon is baking, place the peeled and cubed Yukon gold potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot.
  • Mash the potatoes with a potato masher or fork. In a small saucepan, melt 1/2 cup of unsalted butter with 2 cloves of minced garlic. Pour the garlic butter and 1/2 cup of heavy cream over the mashed potatoes and stir to combine. Season with salt and pepper to taste.
  • To serve, divide the garlic mashed potatoes among 4 plates and top each with a lemon dill salmon fillet. Sprinkle with 1/4 cup of grated Parmesan cheese and 2 tbsp of chopped chives. Enjoy!
