Created by: Howcan Team

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 2 tbsp fresh dill, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 lbs Yukon gold potatoes, peeled and cubed
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped chives

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together 1/4 cup of fresh lemon juice, 2 tbsp of olive oil, 2 tbsp of chopped fresh dill, and 2 cloves of minced garlic. Season the salmon fillets with salt and pepper, then brush the lemon dill mixture over the fillets.
  • Place the salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • While the salmon is baking, place the peeled and cubed Yukon gold potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot.
  • Mash the potatoes with a potato masher or fork. In a small saucepan, melt 1/2 cup of unsalted butter with 2 cloves of minced garlic. Pour the garlic butter and 1/2 cup of heavy cream over the mashed potatoes and stir to combine. Season with salt and pepper to taste.
  • To serve, divide the garlic mashed potatoes among 4 plates and top each with a lemon dill salmon fillet. Sprinkle with 1/4 cup of grated Parmesan cheese and 2 tbsp of chopped chives. Enjoy!

The history of Lemon Dill Salmon dates back to the coastal regions of Scandinavia, where fresh salmon is abundant. This dish has been perfected over generations by skilled chefs who understand the delicate balance of flavors. The zesty citrus of the lemon and the aromatic dill complement the rich, buttery texture of the salmon, creating a harmonious culinary experience. Pairing it with creamy garlic mashed potatoes adds a comforting element to the meal. Today, the best version of this dish can be found in upscale seafood restaurants that prioritize using high-quality, sustainably sourced salmon and fresh, organic ingredients. The key to getting this dish right lies in the freshness of the salmon and the perfect balance of lemon and dill. For a twist, some chefs also incorporate a honey glaze or a hint of smokiness to elevate the flavors.
