Created by: Howcan Team

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh dill
  • 2 cloves garlic, minced
  • 1 cup quinoa
  • 2 cups water or broth
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together 1/4 cup of fresh lemon juice, 2 tbsp of olive oil, 2 tbsp of chopped fresh dill, and 2 cloves of minced garlic. Season with salt and pepper to taste.
  • Place the salmon fillets in a shallow dish and pour the lemon dill marinade over them. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
  • While the salmon is marinating, rinse 1 cup of quinoa under cold water. In a medium saucepan, bring 2 cups of water or broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed and the quinoa is tender. Fluff with a fork and set aside.
  • Preheat the grill or a skillet over medium-high heat. Remove the salmon from the marinade and discard the excess marinade. Grill or pan-sear the salmon for 4-5 minutes per side, or until it is cooked to your desired level of doneness.
  • Serve the grilled salmon over a bed of fluffy quinoa, and garnish with additional fresh dill and lemon wedges if desired. Enjoy!

Lemon Dill Salmon with quinoa is a modern twist on a classic dish, combining the rich, buttery flavor of salmon with the light, citrusy notes of lemon and the fresh, aromatic taste of dill. This dish has its roots in the Pacific Northwest, where the abundance of fresh salmon and the region's focus on healthy, wholesome ingredients inspired chefs to experiment with new ways of serving this popular fish. The dish has gained popularity in trendy, health-conscious restaurants across the country, where chefs are known for their innovative takes on traditional recipes. The key to making this dish shine is to ensure the salmon is perfectly cooked, with a crispy skin and tender, flaky flesh, and the quinoa is fluffy and well-seasoned. For a unique twist, some chefs also incorporate Mediterranean flavors, such as olives and feta cheese, to add a savory depth to the dish. The best version of this dish can be found in upscale seafood restaurants that prioritize sourcing the freshest, highest quality ingredients.
