Lemon Dill Salmon with Quinoa

Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- 2 tbsp chopped fresh dill
- 2 cloves garlic, minced
- 1 cup quinoa
- 2 cups water or broth
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 1/4 cup of fresh lemon juice, 2 tbsp of olive oil, 2 tbsp of chopped fresh dill, and 2 cloves of minced garlic. Season with salt and pepper to taste.
- Place the salmon fillets in a shallow dish and pour the lemon dill marinade over them. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
- While the salmon is marinating, rinse 1 cup of quinoa under cold water. In a medium saucepan, bring 2 cups of water or broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed and the quinoa is tender. Fluff with a fork and set aside.
- Preheat the grill or a skillet over medium-high heat. Remove the salmon from the marinade and discard the excess marinade. Grill or pan-sear the salmon for 4-5 minutes per side, or until it is cooked to your desired level of doneness.
- Serve the grilled salmon over a bed of fluffy quinoa, and garnish with additional fresh dill and lemon wedges if desired. Enjoy!
