Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh dill
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound mixed vegetables (such as bell peppers, zucchini, and red onion)
- 2 tablespoons olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup mayonnaise, 2 tablespoons fresh lemon juice, 1 tablespoon chopped fresh dill, 2 cloves minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to make the lemon dill aioli.
- Place the salmon fillets on a baking sheet lined with parchment paper. Spread the lemon dill aioli evenly over the top of each fillet.
- In a separate bowl, toss the mixed vegetables with 2 tablespoons of olive oil, 1/2 teaspoon dried thyme, 1/2 teaspoon dried rosemary, 1/2 teaspoon garlic powder, and salt and pepper to taste.
- Spread the seasoned vegetables on a separate baking sheet.
- Place both the salmon and vegetables in the preheated oven. Roast for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender and slightly caramelized.
