Instructions

  • In a large pot, heat 2 tbsp of olive oil over medium heat.
  • Add the diced onion, carrots, and celery to the pot and sauté for 5 minutes until softened.
  • Add the minced garlic and cook for an additional 1 minute.
  • Season the diced chicken with salt and pepper, then add it to the pot. Cook until the chicken is no longer pink, about 5-7 minutes.
  • Pour in the chicken broth and bring the soup to a boil.
  • Stir in the orzo pasta and reduce the heat to a simmer. Cook for 10 minutes or until the orzo is tender.
  • Add the fresh lemon juice, lemon zest, and chopped parsley to the soup. Stir well to combine.
  • Taste and adjust the seasoning with salt and pepper as needed.
