Lebanese Warak Enab with Extra Pine Nuts

Ingredients
- 1 jar of grape leaves (about 60 leaves)
- 1 cup of short-grain rice
- 1/2 cup of pine nuts
- 1/2 cup of chopped fresh parsley
- 1/4 cup of chopped fresh mint
- 1 onion, finely chopped
- 3 tomatoes, finely chopped
- 1/4 cup of olive oil
- 1/4 cup of lemon juice
- Salt and pepper to taste
- Water
Instructions
- Rinse the grape leaves under cold water to remove any excess salt, then drain and set aside.
- In a large bowl, combine the rice, pine nuts, parsley, mint, onion, tomatoes, olive oil, lemon juice, salt, and pepper. Mix well to combine all the ingredients.
- Place a grape leaf on a flat surface, shiny side down. Trim the stem. Place a small amount of the rice mixture in the center of the leaf. Fold the sides of the leaf over the filling, then roll it up tightly from the bottom to the top, forming a small cylinder. Repeat with the remaining grape leaves and filling.
- Line the bottom of a large pot with any damaged or leftover grape leaves. Arrange the stuffed grape leaves in layers, seam side down, packing them closely together to prevent them from unraveling during cooking. Place a heavy plate on top of the grape leaves to keep them in place.
- Add enough water to the pot to cover the grape leaves. Place a heatproof dish or inverted heatproof plate on top of the grape leaves to keep them submerged in the water during cooking.
- Cover the pot and bring the water to a boil over medium-high heat. Reduce the heat to low and simmer for 1 hour, or until the rice is cooked and the grape leaves are tender.
- Remove the pot from the heat and carefully transfer the stuffed grape leaves to a serving platter using a slotted spoon. Drizzle with a little olive oil and lemon juice before serving.
