Ingredients
- 1 lb of lamb, cut into 1-inch cubes
- 2 zucchinis, sliced into 1/2-inch rounds
- 1/4 cup olive oil
- 3 cloves of garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine 1/4 cup of olive oil, 3 cloves of minced garlic, 1 teaspoon of dried oregano, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the cubed lamb to the bowl and toss to coat. Cover and marinate in the refrigerator for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb and zucchini rounds onto the soaked wooden skewers, alternating between the two ingredients.
- Grill the skewers for 10-12 minutes, turning occasionally, until the lamb is cooked to desired doneness and the zucchini is tender and slightly charred.
- Remove from the grill and let the skewers rest for a few minutes before serving.
