Korean Galbi, also known as Kalbi, is a traditional Korean dish featuring marinated beef short ribs. The dish has a rich history, with its roots tracing back to the royal court cuisine of the Joseon Dynasty. The marinade typically consists of soy sauce, garlic, sugar, and sesame oil, imparting a perfect balance of sweet and savory flavors. Galbi is often grilled to perfection, resulting in tender, juicy meat with a delightful caramelized exterior. In South Korea, renowned chefs and restaurants in Seoul, such as Mapo Galbi, are celebrated for their exceptional Galbi. The key to a stellar Galbi lies in the quality of the meat and the artful balance of the marinade's flavors. For a unique twist, some chefs incorporate fruit purees like pear or kiwi into the marinade to tenderize the meat further. Today, Galbi remains a beloved dish, enjoyed by locals and visitors alike, and is a must-try for anyone exploring Korean cuisine.
