Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of fresh spinach, chopped
- 1/2 cup of feta cheese, crumbled
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the chopped spinach, crumbled feta cheese, minced garlic, olive oil, dried oregano, salt, and black pepper.
- Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
- Stuff each chicken breast with the spinach and feta mixture, dividing it evenly among the 4 breasts.
- Secure the openings with toothpicks to hold the stuffing in place.
- Place the stuffed chicken breasts in a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
- Remove the toothpicks before serving.
