  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

  • 1 tsp grated ginger
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  • In a large skillet or wok, heat 1 tbsp of olive oil over medium-high heat.
  • Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil and sauté the bell peppers, broccoli, mushrooms, and garlic until they are tender-crisp, about 5 minutes.
  • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, and red pepper flakes.
  • Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir-fry for an additional 2-3 minutes, until everything is heated through and well coated with the sauce.
  • Season with salt and pepper to taste.
  • Garnish with sliced green onions before serving.
  • Serve hot and enjoy!
