Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup sliced mushrooms
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a large skillet or wok, heat 1 tbsp of olive oil over medium-high heat.
- Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil and sauté the bell peppers, broccoli, mushrooms, and garlic until they are tender-crisp, about 5 minutes.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, and red pepper flakes.
- Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir-fry for an additional 2-3 minutes, until everything is heated through and well coated with the sauce.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
- Serve hot and enjoy!
