Instructions

  • Place the riced cauliflower in a microwave-safe bowl and microwave on high for 5 minutes. Allow to cool.
  • Once cooled, place the cauliflower in a clean kitchen towel and wring out as much moisture as possible.
  • In a large bowl, combine the cauliflower, 1/2 cup shredded mozzarella, Parmesan cheese, oregano, garlic powder, salt, pepper, and egg. Mix until well combined.
  • Transfer the cauliflower mixture to the prepared baking sheet and shape into a 10-inch round crust. Bake for 15 minutes, or until golden brown and set.
  • Spread the marinara sauce over the baked cauliflower crust, leaving a small border around the edges. Sprinkle 1 cup of shredded mozzarella cheese over the sauce. Arrange the pepperoni slices and sliced mushrooms on top.
