Ingredients
- 1 head of cauliflower, riced (about 4 cups)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1/2 cup sugar-free marinara sauce
- 1 cup shredded mozzarella cheese
- 20 slices of pepperoni
- 1/2 cup sliced mushrooms
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place the riced cauliflower in a microwave-safe bowl and microwave on high for 5 minutes. Allow to cool.
- Once cooled, place the cauliflower in a clean kitchen towel and wring out as much moisture as possible.
- In a large bowl, combine the cauliflower, 1/2 cup shredded mozzarella, Parmesan cheese, oregano, garlic powder, salt, pepper, and egg. Mix until well combined.
- Transfer the cauliflower mixture to the prepared baking sheet and shape into a 10-inch round crust. Bake for 15 minutes, or until golden brown and set.
- Spread the marinara sauce over the baked cauliflower crust, leaving a small border around the edges. Sprinkle 1 cup of shredded mozzarella cheese over the sauce. Arrange the pepperoni slices and sliced mushrooms on top.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
