Ingredients
- 1 head of cauliflower, riced (about 4 cups)
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1/2 cup shredded mozzarella cheese (for topping)
- 1/2 cup shredded cheddar cheese (for topping)
- 1/4 cup marinara sauce
- 1/4 cup sliced pepperoni or toppings of your choice
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a microwave-safe bowl, microwave the riced cauliflower for 5-6 minutes, then let it cool.
- Once cooled, place the cauliflower in a clean kitchen towel and wring out as much moisture as possible.
- In a large bowl, combine the cauliflower, Parmesan cheese, 1/2 cup mozzarella cheese, oregano, garlic powder, salt, pepper, and eggs. Mix until well combined.
- Transfer the cauliflower mixture to the prepared baking sheet and shape it into a 10-inch round crust. Bake for 15-20 minutes, or until golden brown and set.
- Remove the crust from the oven and top with marinara sauce, remaining mozzarella cheese, cheddar cheese, and your choice of toppings.
- Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
