  • 1 cup thin coconut milk
  • 1/2 tsp turmeric powder
  • Salt to taste

Instructions

  • In a large pot, heat 2 tbsp of coconut oil over medium heat.
  • Add the thinly sliced onion, green chilies, ginger, garlic, and curry leaves. Sauté until the onions turn translucent.
  • Add the diced potatoes, carrots, green beans, and cauliflower florets. Stir well to coat the vegetables with the spices.
  • Pour in the thin coconut milk and bring to a gentle simmer. Cover and cook for 10-12 minutes, or until the vegetables are tender.
  • Once the vegetables are cooked, add the turmeric powder and salt to taste. Mix well.
  • Pour in the thick coconut milk and simmer for another 5 minutes, stirring occasionally.
  • Taste and adjust the seasoning if needed.
  • Remove from heat and serve hot with steamed rice or appam.
