Kerala Style Vegetable Stew

Ingredients
- 2 tbsp coconut oil
- 1 onion, thinly sliced
- 2 green chilies, slit
- 1 inch ginger, julienned
- 3-4 cloves garlic, minced
- 10-12 curry leaves
- 2 medium potatoes, diced
- 2 carrots, diced
- 1 cup green beans, cut into 1-inch pieces
- 1 cup cauliflower florets
- 1 cup thick coconut milk
- 1 cup thin coconut milk
- 1/2 tsp turmeric powder
- Salt to taste
Instructions
- In a large pot, heat 2 tbsp of coconut oil over medium heat.
- Add the thinly sliced onion, green chilies, ginger, garlic, and curry leaves. Sauté until the onions turn translucent.
- Add the diced potatoes, carrots, green beans, and cauliflower florets. Stir well to coat the vegetables with the spices.
- Pour in the thin coconut milk and bring to a gentle simmer. Cover and cook for 10-12 minutes, or until the vegetables are tender.
- Once the vegetables are cooked, add the turmeric powder and salt to taste. Mix well.
- Pour in the thick coconut milk and simmer for another 5 minutes, stirring occasionally.
- Taste and adjust the seasoning if needed.
- Remove from heat and serve hot with steamed rice or appam.
