Ingredients
- 1 bunch of kale, stems removed and leaves chopped
- 1/4 cup of olive oil
- 1/4 cup of lemon juice
- 1 teaspoon of Dijon mustard
- 1 clove of garlic, minced
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of grated Parmesan cheese (optional)
- 1/4 cup of toasted pine nuts (optional)
Instructions
- In a small bowl, whisk together 1/4 cup of olive oil, 1/4 cup of lemon juice, 1 teaspoon of Dijon mustard, 1 clove of minced garlic, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper to make the dressing.
- Place the chopped kale in a large salad bowl.
- Pour the dressing over the kale and toss to coat evenly. Let it sit for 5 minutes to allow the kale to soften slightly.
- If desired, sprinkle 1/4 cup of grated Parmesan cheese and 1/4 cup of toasted pine nuts over the salad before serving.
