Ingredients
- 8 oz of kale noodles
- 2 tbsp of olive oil
- 3 cloves of garlic, minced
- 1 red bell pepper, thinly sliced
- 1 cup of sliced mushrooms
- 1/4 cup of soy sauce
- 2 tbsp of rice vinegar
- 1 tbsp of honey
- 1 tsp of sesame oil
- 1/4 cup of chopped green onions
- 1/4 cup of chopped cilantro
- 1/4 cup of crushed peanuts
Instructions
- Cook the kale noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the minced garlic and sauté for 1 minute.
- Add the sliced red bell pepper and mushrooms to the skillet. Cook for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tbsp of rice vinegar, 1 tbsp of honey, and 1 tsp of sesame oil.
- Pour the sauce over the cooked vegetables in the skillet. Add the cooked kale noodles and toss to combine, ensuring the noodles are well coated with the sauce.
- Cook for an additional 2-3 minutes, stirring occasionally, until the noodles are heated through.
- Remove the skillet from the heat and sprinkle with chopped green onions, cilantro, and crushed peanuts before serving.
