Ingredients
- 4 large eggs
- 2 cups of chopped kale
- 1/2 cup crumbled feta cheese
- 4 whole wheat tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add 2 cups of chopped kale to the skillet and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste.
- Push the kale to one side of the skillet and crack 4 large eggs into the other side. Scramble the eggs until cooked through.
- Divide the scrambled eggs and sautéed kale evenly among 4 whole wheat tortillas.
- Sprinkle 1/2 cup of crumbled feta cheese over the eggs and kale on each tortilla.
- Fold the sides of the tortillas over the filling and roll them up into wraps.
