Ingredients
- 2 cups glutinous rice flour
- 2 cups coconut milk

Instructions
- In a large bowl, combine 2 cups of glutinous rice flour and 1/4 teaspoon of salt.
- Gradually add 2 cups of coconut milk while stirring to form a smooth batter.
- In a saucepan, combine 2 cups of brown sugar and 1/2 cup of water. Cook over medium heat, stirring constantly, until the sugar is completely dissolved and the mixture thickens to a syrup-like consistency.
- Pour the brown sugar syrup into the rice flour batter and mix until well combined.
- If using banana leaves, line a baking pan with them. Otherwise, grease the pan with oil or butter.
- Pour the kalamay mixture into the prepared pan and spread it evenly.
- Steam the kalamay over medium heat for 30 minutes, or until set and firm to the touch.
