Ingredients
- 8 oz of jjolmyeon noodles
- 1/4 cup of gochujang (Korean red chili paste)
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of sugar
- 1 teaspoon of sesame oil
- 1/2 cup of cucumber, julienned
- 1/2 cup of carrot, julienned
- 1/2 cup of onion, thinly sliced
- 1/2 cup of hard-boiled egg, sliced
- 1 tablespoon of sesame seeds
- 1 tablespoon of vegetable oil
Instructions
- Cook the jjolmyeon noodles according to the package instructions. Drain and rinse with cold water. Set aside.
- In a small bowl, mix 1/4 cup of gochujang, 2 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of sesame oil to make the sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the julienned cucumber, carrot, and sliced onion. Stir-fry for 2-3 minutes until slightly softened. Remove from heat and set aside.
- In a large mixing bowl, combine the cooked noodles and the prepared sauce. Toss until the noodles are evenly coated with the sauce.
- Divide the sauced noodles into serving bowls. Top with the stir-fried vegetables and sliced hard-boiled egg.
