Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until they are golden brown and crispy. Remove from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil and cook the Jimmy Dean Breakfast Sausage, breaking it apart with a spatula, until it is fully cooked and browned.
  • Add the diced onion and bell pepper to the skillet with the sausage and cook for an additional 3-4 minutes until the vegetables are softened.
  • Return the cooked potatoes to the skillet and mix everything together.
  • Create 4 wells in the skillet and crack an egg into each well. Season the eggs with salt and pepper.
  • Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
  • Once the eggs are cooked, sprinkle the shredded cheddar cheese over the skillet and cover for 1-2 minutes to melt the cheese.
