  • Add the diced onion and bell pepper to the skillet with the sausage and cook for an additional 3-4 minutes until the vegetables are softened.
  • Return the cooked potatoes to the skillet and mix everything together.
  • Create 4 wells in the skillet and crack an egg into each well. Season the eggs with salt and pepper.
  • Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
