Ingredients
- 1 1/2 cups warm water
- 1 packet active dry yeast
- 1 teaspoon sugar
- 4 cups all-purpose flour
- 1/2 cup finely chopped pickled jalapenos
- 1/4 cup baking soda
- 1 egg, beaten
- Coarse salt, for sprinkling
Instructions
- In a large bowl, combine 1 1/2 cups warm water, 1 packet of active dry yeast, and 1 teaspoon of sugar. Let it sit for 5 minutes until foamy.
- Add 4 cups of all-purpose flour to the yeast mixture and mix until a dough forms. Knead the dough for 5 minutes, then cover and let it rise for 1 hour.
- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Punch down the dough and divide it into small pieces. Flatten each piece and place a small amount of finely chopped pickled jalapenos in the center. Fold the dough over the jalapenos and roll into a ball.
- In a large pot, bring 8 cups of water and 1/4 cup of baking soda to a boil. Boil the pretzel bites in batches for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
- Brush the pretzel bites with beaten egg and sprinkle with coarse salt. Bake for 12-15 minutes, or until golden brown.
