Ingredients
- 1 1/2 cups warm water
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons active dry yeast
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/4 cup pickled jalapeno slices, chopped
- 1/2 cup cooked bacon bits
- 1/4 cup baking soda
- 1 egg, beaten
- Coarse sea salt, for sprinkling
Instructions
- In a small bowl, combine the warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine the flour and salt. Pour in the melted butter and the yeast mixture. Stir until a dough forms.
- Turn the dough out onto a floured surface and knead for 5 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
- In a small bowl, mix together the cream cheese, cheddar cheese, chopped jalapenos, and bacon bits.
- Punch down the risen dough and divide it into 24 equal pieces. Roll each piece into a ball and then flatten it into a small circle. Place a spoonful of the cream cheese mixture in the center of each circle, then pinch the edges together to seal and form a ball.
