Ingredients
- 2 cans of young green jackfruit, drained and rinsed
- 1 tablespoon of soy sauce
- 1 tablespoon of hoisin sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of five-spice powder
- 1/4 teaspoon of black pepper
- 1 tablespoon of vegetable oil
- 1 French baguette, cut into 4 equal pieces and split lengthwise
- 1/4 cup of vegan mayonnaise
- 1/2 cup of fresh cilantro leaves
- 1/2 cup of fresh mint leaves
- 1 jalapeno, thinly sliced
- 1 cup of pickled daikon and carrots (see recipe below)
Instructions
- In a medium bowl, use your hands to shred the jackfruit into small, pulled-pork-like pieces.
- In a small bowl, whisk together 1 tablespoon of soy sauce, 1 tablespoon of hoisin sauce, 1 tablespoon of rice vinegar, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of five-spice powder, and 1/4 teaspoon of black pepper. Pour the marinade over the shredded jackfruit and toss to coat. Let it marinate for at least 15 minutes.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the marinated jackfruit and cook for 8-10 minutes, stirring occasionally, until the jackfruit is slightly caramelized and heated through. Remove from heat and set aside.
- To assemble the sandwiches, spread a generous amount of vegan mayonnaise on the cut sides of each baguette piece. Divide the cooked jackfruit among the baguette pieces. Top with pickled daikon and carrots, fresh cilantro, mint leaves, and sliced jalapeno.
- Serve the sandwiches immediately and enjoy!
