Instructions

  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
  • Add the Italian sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Transfer the sausage to a plate and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil and sauté the diced onion, garlic, red bell pepper, and zucchini until softened, about 5 minutes.
  • Stir in the cherry tomatoes and cooked sausage, and season with salt and pepper to taste. Cook for an additional 2-3 minutes.
  • While the sausage and vegetables are cooking, prepare the polenta according to the package instructions, using chicken broth instead of water for added flavor.
