Ingredients
- 1 lb Italian sausage, casings removed
- 1 cup instant polenta
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
- Add the Italian sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Transfer the sausage to a plate and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil and sauté the diced onion, garlic, red bell pepper, and zucchini until softened, about 5 minutes.
- Stir in the cherry tomatoes and cooked sausage, and season with salt and pepper to taste. Cook for an additional 2-3 minutes.
- While the sausage and vegetables are cooking, prepare the polenta according to the package instructions, using chicken broth instead of water for added flavor.
- Once the polenta is ready, spoon it into the skillet over the sausage and vegetable mixture, and sprinkle with grated Parmesan cheese.
- Cover the skillet and let it simmer for 5 minutes, allowing the flavors to meld together and the cheese to melt.
