Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the sliced Italian sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced peppers, onion, and mushrooms until they start to soften, about 5 minutes.
  • Add the minced garlic and cook for an additional 1 minute.
  • Stir in the diced tomatoes, dried oregano, dried basil, red pepper flakes, salt, and pepper.
  • Return the cooked Italian sausage to the skillet and stir to combine all the ingredients.
  • Reduce the heat to low, cover, and simmer for 15-20 minutes, stirring occasionally.
