  • 1 bunch kale, stems removed and leaves chopped

Instructions

  • In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up into crumbles, until browned and cooked through, about 8 minutes.
  • Add the chopped onion and minced garlic to the pot and cook for an additional 3-4 minutes until the onion is softened.
  • Pour in the chicken broth and diced tomatoes with their juices. Stir in the dried oregano, dried basil, red pepper flakes, and season with salt and pepper to taste.
  • Bring the soup to a simmer and let it cook for 10 minutes to allow the flavors to meld together.
  • Add the chopped kale to the pot and let it simmer for another 10 minutes until the kale is tender.
  • Stir in the heavy cream and let the soup heat through for a few minutes.
  • Taste and adjust the seasoning if needed.
  • Serve the soup hot, garnished with grated Parmesan cheese.
