Ingredients
- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 4 sub rolls
- 8 slices provolone cheese
Instructions
- In a large bowl, combine 1 pound of ground beef, 1/2 cup of bread crumbs, 1/4 cup of grated Parmesan cheese, 1/4 cup of chopped fresh parsley, 1 egg, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix until well combined, then shape into meatballs.
- In a large skillet, heat 1/4 cup of olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add 1 small finely chopped onion and 2 cloves of minced garlic. Cook until softened, about 3-4 minutes. Add 1 can of crushed tomatoes, 1 teaspoon of dried oregano, and 1 teaspoon of dried basil. Bring to a simmer and return the meatballs to the skillet. Cook for an additional 15-20 minutes, until the meatballs are cooked through and the sauce has thickened.
- Preheat the oven to 350 degrees F. Slice the sub rolls in half and place them on a baking sheet. Place 2 slices of provolone cheese on the bottom half of each roll. Toast in the oven for 5-7 minutes, until the cheese is melted and the rolls are lightly toasted.
- To assemble the subs, place 3-4 meatballs on top of the melted cheese on each roll. Spoon some marinara sauce over the meatballs, then top with the other half of the sub roll. Serve hot and enjoy!
