  • 3 cloves of garlic, minced
  • 4 cups of beef or vegetable broth
  • 1 cup of Guinness stout
  • 4 large carrots, peeled and chopped
  • 4 medium potatoes, peeled and diced
  • 2 parsnips, peeled and chopped
  • 2 cups of chopped cabbage
  • 2 sprigs of fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  • Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  • Add the chopped onion to the pot and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for an additional 1-2 minutes.
  • Return the browned lamb to the pot and pour in the beef or vegetable broth and Guinness stout.
  • Add the chopped carrots, potatoes, parsnips, and cabbage to the pot.
  • Tie the fresh thyme sprigs and bay leaves together with kitchen twine and add to the pot.
  • Season with salt and pepper to taste.
  • Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
  • Remove the thyme sprigs and bay leaves before serving.
