  • 1/2 tsp of turmeric
  • 1/2 tsp of cayenne pepper
  • 1 tsp of garam masala
  • 1 cup of coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

  • 1 tsp of garam masala
  • 1 cup of coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  • In a large pan, heat 2 tbsp of vegetable oil over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
  • Add the chopped tomatoes and cook until they start to break down, about 5 minutes.
  • Stir in 1 tsp of ground cumin, 1 tsp of ground coriander, 1/2 tsp of turmeric, and 1/2 tsp of cayenne pepper, and cook for 2 minutes.
  • Pour in 1 cup of coconut milk and bring to a simmer.
  • Add the peeled and deveined shrimp to the pan and cook until they turn pink and opaque, about 3-4 minutes.
  • Season with salt to taste and sprinkle 1 tsp of garam masala over the curry.
  • Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
