Indian Shrimp Curry

Ingredients
- 1 lb of shrimp, peeled and deveined
- 2 tbsp of vegetable oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- 1/2 tsp of turmeric
- 1/2 tsp of cayenne pepper
- 1 tsp of garam masala
- 1 cup of coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pan, heat 2 tbsp of vegetable oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the chopped tomatoes and cook until they start to break down, about 5 minutes.
- Stir in 1 tsp of ground cumin, 1 tsp of ground coriander, 1/2 tsp of turmeric, and 1/2 tsp of cayenne pepper, and cook for 2 minutes.
- Pour in 1 cup of coconut milk and bring to a simmer.
- Add the peeled and deveined shrimp to the pan and cook until they turn pink and opaque, about 3-4 minutes.
- Season with salt to taste and sprinkle 1 tsp of garam masala over the curry.
- Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
