Huel Protein Pancakes

Ingredients
- 1 cup of Huel powder
- 1 ripe banana, mashed
- 2 eggs
- 1 teaspoon of baking powder
- 1/2 teaspoon of cinnamon
- 1/2 cup of milk
- 1 tablespoon of honey
- 1/2 teaspoon of vanilla extract
- 1/4 cup of fresh berries (optional)
- Maple syrup for serving (optional)
Instructions
- In a large bowl, mix together 1 cup of Huel powder, 1 teaspoon of baking powder, and 1/2 teaspoon of cinnamon.
- In a separate bowl, whisk together 2 eggs, 1/2 cup of milk, 1 tablespoon of honey, and 1/2 teaspoon of vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the mashed banana and fresh berries if using.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes, or until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with maple syrup and additional fresh berries if desired. Enjoy!
