Instructions

  • In a large bowl, mix together 1 cup of Huel powder, 1 teaspoon of baking powder, and 1/2 teaspoon of cinnamon.
  • In a separate bowl, whisk together 2 eggs, 1/2 cup of milk, 1 tablespoon of honey, and 1/2 teaspoon of vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the mashed banana and fresh berries if using.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes, or until golden brown.
  • Repeat with the remaining batter.
  • Serve the pancakes warm with maple syrup and additional fresh berries if desired. Enjoy!
