  • In a saucepan, combine 2 cups of whole milk, 1 cup of heavy cream, and 3/4 cup of honey. Heat over medium heat, stirring occasionally, until the mixture reaches a simmer. Remove from heat and let it cool for 10 minutes.
  • In a separate bowl, whisk together 1/2 cup of sugar and 4 large egg yolks until well combined.
  • Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly to temper the eggs. Pour the mixture back into the saucepan.
  • Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
  • Remove from heat and stir in 1 teaspoon of vanilla extract. Strain the mixture through a fine-mesh sieve into a bowl to remove any lumps. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
  • Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions, adding the chopped walnuts during the last few minutes of churning.
  • Transfer the gelato to a freezer-safe container and freeze for at least 2 hours until firm.
