  • Add the honey sausage to the skillet and cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.
  • Remove the sausage from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil.
  • Add the diced bell peppers and onion to the skillet and sauté until they begin to soften, about 3-4 minutes.
  • Return the cooked sausage to the skillet and mix with the bell peppers and onion.
  • Create 4 wells in the sausage and vegetable mixture and crack an egg into each well.
  • Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes for runny yolks.
  • Sprinkle the shredded cheddar cheese over the skillet and cover for an additional 1-2 minutes until the cheese is melted.
  • Season with salt and pepper to taste.
  • Serve the breakfast skillet hot, directly from the skillet, and enjoy!
