Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
Instructions
- In a small bowl, whisk together 1/4 cup Dijon mustard, 1/4 cup honey, 2 tablespoons olive oil, 2 tablespoons apple cider vinegar, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to make the honey mustard marinade.
- Place the chicken breasts in a resealable plastic bag and pour half of the honey mustard marinade over the chicken. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the used marinade. Grill the chicken for 6-7 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let rest for 5 minutes.
- While the chicken is resting, in a large bowl, toss together 8 cups of mixed salad greens, 1 cup cherry tomatoes, 1/2 thinly sliced red onion, 1/4 cup sliced almonds, and 1/4 cup crumbled feta cheese.
- Slice the grilled chicken and arrange over the mixed greens. Drizzle the remaining honey mustard marinade over the chicken and salad.
- Serve immediately and enjoy!
