Instructions

  • In a small bowl, whisk together 1/2 cup of honey and 1/4 cup of Dijon mustard. Set aside.
  • Season the chicken breasts with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add 2 cloves of minced garlic and sauté for 1 minute.
  • Add the seasoned chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through.
  • Pour the honey mustard mixture over the chicken in the skillet, coating each piece evenly. Allow the sauce to simmer for 2-3 minutes, then remove from heat.
  • In a separate pot, bring 2 1/2 cups of chicken broth to a boil. Add 1 cup of wild rice, reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  • Fluff the cooked wild rice with a fork and divide it among 4 plates. Place a honey mustard chicken breast on top of each serving of rice.
