Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup wild rice
- 2 1/2 cups chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish
Instructions
- In a small bowl, whisk together 1/2 cup of honey and 1/4 cup of Dijon mustard. Set aside.
- Season the chicken breasts with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add 2 cloves of minced garlic and sauté for 1 minute.

- In a separate pot, bring 2 1/2 cups of chicken broth to a boil. Add 1 cup of wild rice, reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the cooked wild rice with a fork and divide it among 4 plates. Place a honey mustard chicken breast on top of each serving of rice.
