Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.

  • In a small bowl, whisk together 1/4 cup honey, 1/4 cup fresh lime juice, 2 tablespoons olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to make the dressing.
  • In a large bowl, combine the cooked quinoa, 1/2 cup diced red bell pepper, 1/2 cup diced cucumber, 1/4 cup chopped fresh cilantro, and 1/4 cup sliced green onions.
